No Stripe key was found, so the built-in demo checkout is active. It emits a properly signed webhook that runs through exactly the same fulfilment path as Stripe (write order → activate subscription → grant credits) — only the payment step is replaced by you clicking “simulate payment”. Add STRIPE_SECRET_KEY and it switches back to Stripe automatically.
